Position Summary: Assisting the Finance & Operational Departments in procurement of special projects, managing contract & insurance tracking and monitoring, reporting and controlling of Cost of Sales in the hotel. Ensuring that all measures, targets and standards are achieved to the highest standard, ensuring compliance with audit & control, conducting financial analysis and reporting, identifying & implementing cost reduction initiatives, having responsibility for Cellar & Dry Store, and managing the Food Buyer & Goods Receiving team.

Responsibilities: Here's what your journey with us entails

  • Assisting Department Managers in all aspects of purchasing (e.g., Food, Beverage and Controllable) to ensure quality and profitability.

  • Assisting Department Managers in maintaining or reducing cost of sales margins to target.

  • Delegating and enforcing first in/first out inventory rotation for all storeroom products.

  • Ensuring that proper safeguards are in effect for the security of the food and beverage storeroom assets.

  • Enforcing item use-up and par stock levels with storeroom personnel, F&B and Kitchen management to keep inventory at lowest level possible levels.

  • Communicating with Kitchen, F&B outlets and vendors to ensure timing of deliveries satisfies advanced food production needs.

  • Using existing computer programs to perform daily and period end food flash and beverage costs.

  • Maintaining inventory controls for proper levels, dating, rotation, requisitions, etc.

  • Completing administrative tasks on a timely basis (e.g., C-7s, menu costing, general office duties).

  • Completing month end inventory according to Marriott International and Hotel policies for all inventories including food, beverage, spa and retail inventory as required.

  • Calculating figures for food and beverage inventory ensure cost pricing is reviewed against invoices and kept current.

  • Ensuring that price and product availability issues are communicated as needed to the Kitchen and F&B Management.

  • Using existing computer programs effectively to place orders, receive orders, post invoices, complete requisitions, update items and costs.

  • Maintaining an accurate beverage perpetual stock.

  • Providing direction and assistance to departments regarding accounting and budgeting policies and procedures, and efficient control and utilization of financial resources.

  • Managing the Cellar & Dry Store (attendance during opening hours, stock control, stock rotation, ad-hoc stock checks, checking expiration dates etc)

  • Maintaining inventory control and par stock adherence in line with audit requirements.

  • Participating in Month/Year End Stock Takes and act as main liaison. Issuing meeting minutes for final wrap up and ensuring all audit action points are followed through with relevant parties.

  • Ensuring Nominated Vendors are used throughout hotel and correct procedures followed for any deviation.

  • Monthly review Banquet Cash Bar Potential Reports to ensure they are correctly reconciled and investigate any discrepancies.

  • Monthly or Quarterly (as required) issue Sales Mix reports for all Food & Beverage Outlets, highlighting opportunities with menu engineering to relevant Department Heads.

Qualifications:

  • Minimum of 1 year of experience in a similar role within the hospitality industry, preferably in a luxury hotel environment.

  • Strong understanding of standards and procedures.

  • Exceptional interpersonal and communication skills with the ability to interact effectively at all levels.

  • Detail-oriented with a passion for delivering excellence in customer service.
